Why are three of the coffees whole bean only?
Mist Valley Blend, Wild Estate and Rainforest Reserve are lighter roasts where the aromatics are the point. Ground coffee loses its most delicate character within about 48 hours, so we ship them whole and let you grind fresh. Midnight Ghats and Monsoon Roast are available pre-ground for South Indian filter, because they hold up to it.
Which grind do I need for a South Indian filter?
Medium-fine, around 300–400 micron. Choose "Ground – Filter" at checkout on Midnight Ghats or Monsoon Roast and we grind it for you. Use a 1:8 ratio, water at 93–96°C, and let the decoction stand five minutes before adding milk.
Can I get Rainforest Reserve pre-ground?
No, and this one we will not budge on. It is a light micro-lot from a single plot, and grinding it in advance loses exactly what makes it worth buying. Grind it the morning you brew it, at 92–94°C.
What does "roasted to order" actually mean?
Nothing is roasted before someone buys it. Your beans are roasted after your order comes in and dispatched within 48 hours of roasting. It means we cannot ship same-day, and it means what arrives is genuinely fresh rather than shelf-aged.
How should I store it?
Sealed, cool, dry and out of direct sunlight. Press the air out before resealing the zip-lock. Do not refrigerate or freeze — condensation does more damage to roasted coffee than time does. Whole bean holds its character for roughly three weeks after roasting.
How do the five roasts differ?
Same district, four processing methods, five roast levels. Rainforest Reserve is the lightest — stone fruit and jasmine. Mist Valley Blend is bright and floral, Wild Estate balanced and cocoa-forward, Monsoon Roast earthy and jaggery-sweet from monsooning, and Midnight Ghats a full dark roast built for filter.
